China has various cuisine to feed different people who have various requirements for food. Traditionally there are eight schools for Chinese cuisine including Sichuan Cuisine, Canton Cuisine, Shangdong Cuisine, Zhejiang Cuisine, Fujian Cuisine, Jiangsu Cuisine, Hunan Cuisine, Anhui Cuisine. Sichuan Cuisine is the most popular one in China, while Canton Cuisine is popular at abroad which the emigration of Cantonese people. Whilst travelling in China, tasting local food is definitely unforgettable experience.
As Sichuan Cuisine is the most popular one all of China, it goes overseas as well to attract more overseas to taste its various flavors. Mapo Toufu, Kongpao Chicken, Twice cooked pork, and hot pot etc. are its representatives.People from Sichuan province prefer to eat spicy food. Local specialties including Grandma Chen's Tofu (Mapo doufu), Chengdu Hot pot, and Dan Dan Mien (literally meaning, "Noodles carried on a pole" (Dan Dan Noodles) etc. are spicy. Mapo Doufu and Dan Dan Mien contain Sichuan peppers (huājiāo; 花椒; literally "flower pepper") to give them additional flavor. Sichuanese cuisine features careful pairings of boldness and subtlety in dishes, snacks, banquets, and hotpot. A characteristic saying goes: 'one dish, one style; one hundred dishes, one hundred flavors; flexible use of hot chilies and delicate flavors.'
The delicious Peking Roasted Duck is the famous dish in Beijing. The best restaurants to taste it are Quanjude Restaurant, and Datong Duck Restaurant in Beijing. Actually the chief chef in Datong Duck Restaurant is from Quanjude.
In Chongqing, the hot-pot and noodles(Xiaomian in Chinese) are getting more popular, spicy taste and more flavor in the soup made it popular in the Chinese Cuisine.
Shaanxi Paomo in the beef or mutton soup is the most famous meal in Xian. You will get the pancake that you have to make it into small pieces by your hands, then it will be cooked and re-offered to you.
Dumpling are the common food in the Northern China, there are steam dumplings, boiled dumplings, and fried dumplings etc. The fillings are different in different places, it can be meat, vegetables, or seafood. Currently, you can taste the dumplings in every city in China.
The kebabs are very popular for the Muslims living in Xinjiang, Shaanxi, and Gansu Provinces, which goes with Nang bread or pancake as the main meal.
The seafood in Hainan, Guangdong and Fujian Provinces are very well-known for their traditional method to preserve it and cook it.
